Strawberries and Cream

Strawberries and Cream
First, I must ask you guys for forgiveness. I've been traveling and had a pretty serious paper to write for school and haven't really had time to keep you guys in the loop. Secondly, since it's the end of the semester, I decided to treat Mr. Neal and myself to a cute little dessert. I'm not sure if I've mentioned my love for cooking before, but I'm obsessed with creating beautiful meals! Now, desserts are a different story. I lack the patients required to bake cakes and cookies. Don't get me wrong, I have been known to bake a rum cake or chocolate chip bacon cookies...but my love is truly cooking. Anyway, in the spirit of quick creations, I decided to make homemade coconut whipped cream and pair it with strawberries and shaved almonds. 
I got inspired by OhSheGlows and OhLadyCakes to make this great non dairy whipped cream. I figured that pairing it with some organic strawberries and a few almonds would be an easy and cute treat. Ready for my version? Here goes!

1. I really just want to share how beautiful my strawberries are! 

2. You need one can of coconut milk. You want to place your can in the fridge for anywhere from a few hours to overnight. Mine had been in the fridge for about a week. You also need sugar, cinnamon, and vanilla (all my choices; the recipes listed differ slightly).

4a. Fold your separated cream into a mixing bowl (excuse my mess please).
4b. Add your sugar and cinnamon (I used pure cane sugar. Feel free to use whatever you have).
5. Whip your mixture for a few minutes with your mixer. 
6. This will be your end result.

7. Place strawberries in a bowl.
8. Add a dollop of your fresh coconut whipped cream and top with shaved almonds (or your favorite garnish). 

9. Eat. Enjoy and thank ME for the recipe idea :-)
